Menu Plan Monday



  • Monday: Tomato soup & Grilled Cheese Sandwiches (for Josh & Kenzie)

  • Tuesday: BBQ chicken kabobs w/onion & green pepper

  • Wednesday: Crockpot Mushroom Chicken over Baked Potatoes & green beans

  • Thursday: Salmon & Rice

  • Friday: Chicken with "pizza rice"

My in-laws live in Colorado Springs so this summer on our visit we went on a mini tour to some places we hadn't been before -- Royal Gorge, Estes Park, and drove through the Rocky Mountain National Park. It was glorious!

I'd love your recipe for chicken mushroom crock pot dish you have listed for Wednesday..

The recipe is embarassing, I'm totally a throw it together fast kind of cook. It's skinless chicken breasts, cream of mushroom soup, a little bit of chicken broth, a little bit of rosemary and you can add extra mushrooms (canned) if you want. I let it cook in the crockpot about 6 hours. There are no specific amounts, just to taste is all. Once it's cooked I shred the chicken and put the mixture over potatoes or rice.

Sounds like a great week Natalie! I have tomato soup and grilled cheese on my menu this week also, that's always an easy and good meal that we enjoy :) And I do a crockpot mushroom chicken also, although I usually use bone-in chicken breasts. I haven't made it in a while, so I need to put that on my menu soon. The mushroom and gravy is really good over potatoes :)

So ya how do you make the "pizza rice" It sounds so good. If you can leave it for me on my blog I would love that. I think my hubby and kids would just down it.

Kabobs - yum! We had those this summer when the weather was nice. Unfortunately I think we are now out of BBQ weather.

Pizza rice...that's why my husband calls it anyway...is this:

Get a glass baking dish. Put in chicken (boneless, skinless breasts or pieces), add minute rice and water (use a little less water than you would if you were cook just the rice), cover with canned tomato soup and stir up. Add onion salt, garlic salt, oregano, basil and parmesean cheese (I use the kind in the green canisters). Mix that up. Cover with foil and cook on 350 until chicken is cooked through (varies depending on how much chicken you have and if it was defrosted or frozen). Add mozzerella cheese on top to serve (I don't always do that part). It's not an exact recipe, all just to taste. It's something I made up and Josh loves. He calls it pizza rice because he says it tastes like pizza. LOL!

I love kabobs but have such a hard time making them. Either the chicken isn't cooked or the veggies stick to the grill.

I'm not sure what I am doing wrong.
