Fun da-middles *GIVEAWAY*

Cupcakes seem to be all the rage these days. They're certainly a hit with both children and adults. But let's get serious, as busy moms who has time to make super fancy cupcakes? There's a reason cupcake cafes charge an arm and a leg for one of their fancy confections, they take time to make. I've tried to make some cute cupcakes and have honestly succeeded a few times, but they were stressful and not something I would want to do often. And they were hard to transport to the event I made them for in the first place. So what's the solution?

It just might be Betty Crocker's Fun da-middles! I'd passed these at the grocery store without even a second glance. I didn't realize they were a mix. I thought they were just a box of cream in the middle cupcakes. I was so wrong! They are a mix where you cook them up at home with the cream in the middle. No need to frost them if you don't want to because as the name suggests, the fun really is in the middle! Can you imagine how easy these could be to transport to a party or other event?!?!!

After one of the craziest and busiest months of my life, I finally had time yesterday to make these. I expected them to be harder than they were, but it couldn't have been easier. I just mixed up the batter with some eggs, oil, water and the mix. Then put a little in cupcake liners. Squeezed the packet of cream and evenly distributed it, then covered the cream with the remaining batter. Twenty-five or so minutes later I had a dozen Fun da-middles cupcakes!

They look so simple and unassuming, right?
